| Audreys Pumpkin Chutney/Pickle |
3lb pumpkin 3lb apple 1lb onion 3/4lb sultanas[optional] 1 ½ pints vinegar 1 lb sugar 2tsb ground ginger 1tsp pepper 1tsp ground clove 1tsp cayenne
Finely chop or mince together all ingredients Put all into a large saucepan with vinegar and spices and cook until softened and slightly reduced, then add sugar. Continue cooking until thickened.
Almost any fruits can be used for chutney in this way Just keep the proportions approximately the same, Although the spices can be varied to taste. Good combinations are; Green tomato and Apple Apple and date. Plum and Apple. Apricot and Apple. The method is always the same, but apple is a good ingredient as it helps the chutney thicken HINT Try to use jars with plastic lids ,coffee jars are good,as vinegar eats through metal lids
