| Peel, deseed and chop 1 small pumpkin. Roast until tender and puree. Take one slice of bread (sourdough is good) 3-4 cloves garlic and 400g cashew nuts. Add pumpkin puree and blend adding enough olive oil to make a soft dip (approx 3tbsp) it needs to be a similar consistency to hummus. Add salt and pepper to taste. |
